Healthy Soup Recipe #1

MINESTRONE

Thick tomato soup with veggies and beans.
Makes 5 cups
Serving Size: 1 ½ cups

INGREDIENTS:

  • ·            1 cup baked beans
  • ·         ¾ cup cooked pasta (macaroni) / 1/3 cup uncooked pasta
  • ·         1 small onion(chopped)
  • ·         3 large tomatoes
  • ·         ¼ cup carrots (finely chopped)
  • ·         1 medium bell pepper (red/green) (finely chopped)
  • ·         1 tbsp olive oil
  • ·         ¼ tsp pepper
  • ·         1 ½ tsp red chili flakes
  • ·         1 tsp dried basil
  • ·         1 tsp dried oregano
  • ·         2 tbsp tomato ketchup
  • ·         1 tsp garlic (grated)
  • ·         Salt to taste


METHOD:

1.    Boil the pasta and keep aside.
2.    Wash the tomatoes well grind in a liquidizer. Keep aside.
3.    Heat the oil in a pan and sauté the garlic in it .Add the onions and carrots and sauté for about 5 minutes.
4.    Now put the capsicum along with a little salt and sauté again for about 3 minutes on a medium flame.
5.    Add the baked beans. Cook for about 5 minutes.
6.    Finally add the pasta, ketchup, oregano, basil, chili flakes and pepper.
7.    Cook it for 3-4 minutes and serve hot
